
Getting the Crust Right: Why Fast-Response IR Tubes Matter in Rotary Ovens
In a commercial bakery, a single degree is the difference between a perfect golden crust and a ruined batch. It’s frustrating. You’ve done everything right with the dough, but the oven just doesn’t cooperate, leaving you with a crumb structure that’s off or a color that looks… wrong. That’s why we use fast-response infrared (IR) tubes. Unlike convection heating, which relies on moving air, IR tubes use radiation. It hits the surface of the bread instantly. No waiting around for the air to warm up.
The secret to stopping the “burn”
The biggest headache with rotary ovens is “overshoot.” You know the feeling—the controller tells the heat to stop, but the elements stay hot for too long, and suddenly your loaves are scorched on top. We fix this by using tubes with low thermal inertia. Basically, they react fast. When the PID controller cuts the power, the radiation stops almost immediately. Of course, we have to be careful with the wattage. If you cram too much power into a short tube, you’ll fry the filaments. We spend a lot of time balancing the power density so the heat actually gets into the dough without burning the outside.

We use high-purity quartz for these tubes because it lets the IR light pass through without any interference. Depending on what you’re baking, we can add specific coatings to shift the emission spectrum. It sounds technical, but it just means we can target the moisture in your dough more effectively. And because these ovens are constantly spinning, things shake. We use heavy-duty industrial connectors so the tubes don’t vibrate loose. Plus, they’re designed as drop-in replacements. You can swap one out without having to rewire your entire rack.
A few things to keep in mind
Here’s the catch: high-intensity IR tubes pull a lot of power. You’ll want to make sure your contactors can handle the constant switching. That rapid cycling puts a bit more wear and tear on your electrical parts over time. Also, keep an eye on your cooling fans. If the air around the tube housings gets too hot, it’ll eat away at the life of the quartz. Keep them cool, and they’ll last a lot longer.
