Most people think that if a heater kicks in fast, it must be sucking a ton of power from the grid. It sounds logical, right? But when it comes to these 800W IR heaters, it’s actually the other way around. The secret isn’t about raw power. It’s about killing the “lag.”
Getting rid of the wasted heat
Think about a standard oven. Those big metal coils heat up the air, and then the air eventually heats your pizza. It’s slow. Worse, you’re spending money to heat up the air and the oven walls—stuff that doesn’t even end up on the plate. Our 800W shortwave IR lamps don’t bother with the air. They send heat straight into the dough and cheese. When I talk about “second-level response,” I’m talking about how quickly that lamp hits its peak temperature and, more importantly, how fast it cools down the second you cut the power. Because these quartz tubes are so light compared to a chunky steel element, we can flicker the power on and off in tiny, rapid bursts. You aren’t accidentally overheating the oven. The sweet spot for a perfect crust
We landed on 800W because it’s just enough punch to sear the top of the pie without turning the crust into a cracker. We use high-purity quartz to keep that heat clean. If you pair this with a PID controller, the magic really happens. Because the heater reacts so quickly, you can keep your temperature in a tiny, precise window. No more guessing games.
One thing to watch out for
There is a catch, though. Since the power is clicking on and off every few seconds to keep things precise, it puts a lot of wear and tear on your switches. If you use a cheap mechanical relay, it’s going to burn out fast. Do yourself a favor and use solid-state relays (SSRs). They can handle that rapid-fire switching without breaking a sweat, so you don’t have to worry about your oven quitting on you mid-rush.
