If you just blast the food with raw heat, you’ll end up with a dry, tasteless cracker. That’s why we use stainless steel IR emitters. They hit the surface with exactly the kind of energy needed to trigger that Maillard reaction (the science-y word for browning) without sucking all the moisture out of your dough. The trick to the color Here’s the thing: to get that rich color, you need high-intensity shortwave or medium-wave IR. If the intensity is too low, the heat just sinks deep into the bread. You’ll end up with a fully cooked inside but a pale, sad-looking outside. We figure out the wattage and voltage based on how far the emitter sits from the food. More wattage per centimeter means a stronger heat flux. That’s what gives you that rapid, beautiful caramelization. We went with stainless steel housings because they can actually take the abuse. They protect the heating element while pushing all that IR radiation straight down onto your product. You can tweak the length and power to fit whatever oven you’re using. If you’re running a high-volume line, we can crank up the power density. Just be careful. If you push too many watts into a small space and your conveyor speed isn’t dialed in, you’re going to get “hot spots” that char the crust. Getting it wired up Connecting these to your control board is a breeze, but your PID controller needs to be spot on. IR emitters react almost instantly. If your sensors are in the wrong spot, you’ll overshoot your temperature and burn everything in sight. I always suggest pairing these with a high-frequency SSR to keep the heat steady. Also, make sure your power supply can handle the initial surge when you flip the switch, or you’ll be spending your morning resetting breakers.
