
Stop Fighting the “Edge Effect” in Your Bread Ovens
If you’ve spent any time with industrial bread ovens, you know the frustration. You pull out a tray and the center looks perfect, but the edges? They’re pale, under-baked, and just not right. It happens because the edges of the tray lose heat way faster than the middle. It’s a constant battle, and usually, you just end up settling for inconsistent loaves. We found a better way to handle this. Instead of relying on the standard heating elements, we use targeted shortwave infrared (IR) lamps.
Why air isn’t cutting it
Here’s the thing: most ovens rely on convection or resistive heating. They basically try to move hot air around. But air is a terrible conductor. By the time that heat actually reaches the edges of your tray, it’s already gone. IR emitters are different. They don’t wait for the air to warm up; they send energy via electromagnetic waves. That heat hits the dough directly. We use high-power density lamps to create what I call a “heat wall” around the perimeter of the oven. It basically cancels out the cold air leaking in from the oven walls, so your edges finally bake at the same temperature as the center.
The gear and the trade-offs
We use high-purity quartz glass for the tubes. Why? Because these things go through a lot of thermal stress. Cheap glass warps; this stuff doesn’t. We also use R7s or SK15 connectors, so you can just pop them in. No fuss. You’ve got two choices here: clear or coated tubes. Coated lamps spread the heat out a bit more evenly. Clear lamps? Those give you a sharper, more intense hit of heat. It really depends on what your specific loaves need. But a word of warning: these lamps pull more power. Before you swap them in, double-check your wiring and contactors. You don’t want to blow a circuit right in the middle of a peak production run.
Keeping things running
The best part is the speed. These lamps hit operating temperature in seconds. You can stop wasting time on long pre-heats and run your oven with much tighter control. And when one eventually burns out—because they will—you don’t have to rewire the whole bank. You just swap the lamp and get back to work. One last tip: keep the quartz tubes clean. If grease builds up on the glass, it creates hotspots. That’s how you get a cracked tube, and nobody wants to deal with that on a Tuesday morning.
