
Getting the Crust Right: Why we use 250W Infrared Elements
Most deck ovens do the basics—they heat the stone to cook the bottom and use hot air for the rest. That works, but it’s limited. We decided to throw in a third option: radiant heat via 250W infrared elements. The big win here? You can finally nail that perfect top crust without worrying about burning the bottom of your loaf to a crisp.
Why 250 Watts?
It’s all about balance. We landed on 250W because it gives you enough punch to get the job done without scorching your dough. These elements send out short-wave radiation. Instead of just warming the air, the energy hits the surface of the bread almost instantly. This kicks the Maillard reaction into high gear, giving you that rich, golden-brown color way faster than hot air ever could. And we’re careful with the wattage for a reason. If you go too high in a small space, you end up with “hot spots.” You’ll get a burnt peak on your bread while the sides are still pale. Not a great look.
The Nitty-Gritty on the Build
We use high-purity quartz tubing for the housing. Why? Because it doesn’t crack when the temperature jumps up and down. Inside, there’s a tungsten filament that hits its operating temp in a couple of seconds. No waiting around. We also kept the connectors standard. If a tube eventually burns out, you can just pop a new one in. You won’t have to tear apart your control board or call in an electrician just to swap a part. One quick tip: keep the glass clean. Flour dust and moisture happen in a bakery, but a smudge on the quartz kills the efficiency of the heat.
A Few Things to Keep in Mind
Adding these elements does mean your oven pulls more power. Just double-check that your electrical panel can handle the extra load before you plug in. Also, these things get incredibly hot. You’ve got to make sure your upper vents are clear. If the heat gets trapped around the housing, it’ll eat through your wiring insulation. Keep the air moving, and your oven will last a lot longer.
